What I Eat - Day Ninety-Eight

It's that time of year when I'm eating lots of winter foods, like squash and cabbage, but really looking forward to eating local, fresh fruits and veggies!

Breakfast - Roasted Butternut Squash

​This breakfast looks a bit more burnt than it actually was. It was delicious!  I had previously roasted a butternut squash. When it came time for breakfast I sprinkled pine nuts and Daiya mozzarella style shreds on it, and warmed it back up in a 350 degree oven.

Lunch - Caribbean Roast Chicken Salad 

From the Artisan Cafe.  This lunch was really, really good!

Dinner - Taco Salad

I was surprised by how well this dish turned out.  I've started using steamed green cabbage as a base for lots of dishes, and it works very well.   Cabbage is cheap and extremely nutritious!  

Ingredients:
  • steamed green cabbage
  • Daiya Mozarrella Style Shreds (they melted once I mixed them in with the hot dish) 
  • avocado
  • green onion
  • red onion
  • ground beef (from a Powassan farmer) prepared with taco seasoning

I didn't actually know that there are winter foods. It's quite interesting for me to know about it though because I now have some ideas on what to eat during the season. But as for me, what I do love having during winters are hot drinks because of the cold weather obviously. I do also love fresh fruits and veggies even though it is not winter. Well, I guess there is a reason behind why you actually eat these foods since I have this thinking that you are into healthy living. Anyway, thanks for letting us know about this though.

    What I Eat

    I want to give you an idea of how to eat healthfully on a restricted diet, without a lot of work, by showing you how I eat!  I eat strictly gluten-free.  You'll find A LOT of veggies in this blog!  I eat both fish and meat a few times a week (local and/or humane, whenever possible), and dairy when I'm visiting family and friends, or eating out.   I hope you find this blog inspiring and interesting!
