Welcome to another week of what I eat! I'm headed to beautiful Victoria, British Columbia, for the holidays! I hear wonderful things about all the options for people on limited diets, like me. I'm really looking forward to it. I might post from my vacation but, otherwise, except to hear all about it in the first week of January. I wish all of you a wonderful holiday season! Breakfast - Potato Stir-fry This stir-fry was made with potatoes, zucchini, celery, and Herbes de Provence. I topped it with hemp hearts once it came out of the pan. Lunch - Parsley Salad Ingredients -one organic apple, diced -two golden beets, peeled and diced -a huge handful of parsley, chopped -raw sunflower seeds -Renee's Poppy Seed Dressing Dinner - Arugula Quinoa Salad Recipe here, the only thing I changed was to substitute a kambocha squash (including the rind) for the recommended acorn squash. This was really delicious! Cookies!
Enjoy Life is a great brand that avoids what they refer to as 'the big eight' allergens (see graphic below). Many of my patients, family members, and friends are intolerant of corn.....so I do wish they would make it the 'big nine,' but they're still doing pretty well. These cookies are yummy and rich! They taste and feel exactly like cookies you would bake in your own oven. These are the ingredients, I suspect they don't label them as corn-free because they are concerned about trace amounts: INGREDIENTS: Flour Mix (White Rice Flour, Buckwheat Flour, Millet Flour), Chocolate Chips (Cane Sugar, Natural Chocolate Liquor (Non-Alcoholic), Non-Dairy Cocoa Butter), Palm Oil, Brown Pure Cane Sugar, Evaporated Cane Juice Crystals, Natural Process Cocoa Powder, Natural Flavors, Vanilla, Salt, Sodium Acid Pyrophosphate, Baking Soda, Xanthan Gum, Konjac Flour, Rosemary Extract

What I EatI want to give you an idea of how to eat healthfully on a restricted diet, without a lot of work, by showing you how I eat! I eat strictly gluten-free. You'll find A LOT of veggies in this blog! I eat both fish and meat a few times a week (local and/or humane, whenever possible), and dairy when I'm visiting family and friends, or eating out.
